Muscadines ARE grapes. Treat them like you would any other grape in a pyment. They'll be lower sugar and acid than vinifera and have thick skins typically, but they'll work normally. I'd just crush and chapitalize with honey to get to your target gravity.

The muscadine grape is is rich in polyphenols and other nutrients known for their health benefits. They grow wild down here in the southeast, or can fairly easily be grown in the garden.
